- Sowans:- This was made by steeping a plateful of oaten meal and a couple of handfuls of the husks or shells of oats in a crock of water. (The husks were got from the corn-mill). It was left for about three weeks until it had soured. Then it was strained and boiled. It thickened up into a kind of porridge and was eaten with sweet milk.
(In the memory of some Bailieboro people, a man went around the town selling sowans ready for boiling)Boxty:- The raw potatoes are grated and wrung out of a clean cloth. They are then put on a bread-board, a small amount of salt and bread soda is added, and dry flour is kneaded into the mixture until it will take up no more. The dough is shaped into a cake and baked on a pan or griddle.(continues on next page)- Collector
