- Butter-making at home is dying out in the district. Only a few people in the locality make it now. Barrel churn used. Some time ago the churn dash was used, up and down method. Butter made once a week in Winter and twice a week in Summer. Churning done by the farmer's wife or servant girl. Takes about 3/4 hrs to make. Water put in during process to cool it. Any stranger coming in during making had to put hand on the churn and twist the handle so as not to take away the butter. The crackling noise in the churn announces when the butter is made. Above water is then poured in and then the butter-milk is drained off. Butter then taken out and washed 3 or 4 times. Then salted and made into meascáns of 2 lbs or 4 lbs each. Sometimes the butter is made into small cones. Butter-milk used for making bread and also given to pigs and fowl.
