- Oat Cake
By far the oldest bread in this district as in other parts of Ireland is oatcake. This bread was made hundreds of years ago in the hot stones, exactly as it is made today only that now the best way of baking it is on a gridle, better than a pan by far.
The oatmeal is put in a basin, mix a little salt through and add water to soften, knead well, shape and put up against the griddle to bake before a nice bright fire.
A later way of making oatcake is to add a small quantity of flour, a very little fat, a pinch of baking soda, salt, mix all the dry ingredient together, wet with water, knead, form into shape, place on tins, having the cake may then and bake in the oven of the range. This way suits the modern ovens but the oatcake is the same. The oatcake is best when well baked with a good hard crust.
