1. Churning

   We have a churn at home in which we do all our churning. It is about two feet and a half in height and it is about a foot and a half in width. It is a little wider at the top than at the bottom. The sides of it are round and it is bound together with iron hoops.
   In Winter we do not churn as often as in Summer. When we have too much milk left, we leave it by for a few days until it is sour and then it is put into the churn. It is left there until we have time to churn it. It is churned with a "churn dash". Mother has to pour in boiling water and keep the water boiling. sometimes our neighbors come in when we are churning to help us. Sometimes they want the loan of our "churn dash".
   It takes us almost an hour to churn. The "churn dash" is always kept moving from side to side and sometimes it is given a rolling motion from side to side. The butter gathers into small lumps when it is nearly ready. After a while it gathers into large lumps and when one is able to
