- We churn once a week in Winter and Summer. When the cows are milked the milk is strained into milk pans and is allowed to thicken. Then it is churned in in the churn by hand. The various parts the churn are the caisin, the hoops, the staves and the lid.Any stranger who comes to the house when the churning is going on takes a "brash" and says "God bless the work" because it is said that of this is not done the butter will be brought. If a man goes out smoking or if a coal is taken off the fire and brought out of the house without another coal put on the person who does so will bring the butter. It is believed that if a can with the track of milk on it is brought to the well and rinched at the well that the butter will be rinched away.Once upon a time a man from my district was going to the fair of Boyle. It was early in the morning and when he was about half way he heard a noise like churning. He was surprised to think that anyone was churning so early in the morning so he stood and listened.
