  1. Method of making boxty.
    The following method has been given to me as the correct way to make the above dish.
    First wash and peel the largest of the potatoes - say a two gallon can. You put down an equal quantity to boil. When boiled skin them and wash them.
    Grate the raw peeled potatoes with a grater.
    Get a linen bag or washed flour bag and put the grated potatoes squeezing out all water.
    This done the contents are well mixed with the mashed potatoes. Salt is added.
    When the admixture is well kneaded a little flour is added for adhesiveness.
    It is then made into dumplings, put in a pot of boiling water and boiled for 3/4 hour.
    They are eaten with butter or sliced and fried.
    They furnish a good Friday's dinner.
    Pan boxty is another variety.
