- 514BreadOats, rye, wheat were ground and made into bread in this country in olden times. The above were Kiln-dried in pots over the kitchen fire and then ground in a quern.Querns were made out of sandstone, they were made up of two parts. The outside one was like a small oven, the outside rim was about four inches high, the other part fitted into it and was turned around with an upright handle. Both faces were punched with a sharp punch and the grain was caught in the holes and ground. One side of the quern was lower than the other and had a small hole through the side where the ground flour dropped into a vessel and was then put through a sieve to separate the hulls. There was no soda then and that is why the bread was so black. Bread was also made from potatoes and was(leanann ar an chéad leathanach eile)
