In olden times oaten bread was used mostly.
In each district there was a mill where the people ground the oats. These mills were worked by water and the corn was ground by huge grinding stones.
They brought the meal home and used it for making porridge and oaten bread. In making oaten bread they first wet the oatmeal with water. A little salt and sugar was then added and the bread was baked on a flag leaning against some article in front of the fire.
Sometimes they made a different kind of oat cake. They mixed oatmeal and buttermilk in a dish. This mixture was then put between two leaves of cabbage and left to bake by the fire for a quarter of an hour.
They also made potato bread and boxty. In making boxty they first washed the potatoes. then the potatoes were scraped into a basin and they boxty was squeezed with a clean cloth. This was then baked on a(leanann ar an chéad leathanach eile)- Bailitheoir
