- Churning
We have a churn, it is a machine churn, and holds ten gallons of milk and is worked by hand. It is a new churn, we have it about four years. The principal things are the dash and the handle, the handle turns the dash. Butter is made twice a week in Summer and once in Winter. My mother usually does the churning ans somebody helps her. When strangers come in when churning is going on they help, as it is believed if they don't they bring the butter with them.
It takes about half an hour to churn. The butter is lifted out with butter pads and then washed and then there is salt put on it, and then it is washed again, it is then rolled into walls and used. The buttermilk is used for making bread and is sometimes given to calves.- Bailitheoir
