In olden times the only bread made was from oat-meal. This was called oaten cake and it was baked on a griddle or pan. The oats was ground in a mill in Lecarrow.
Flour in those times was a luxury and was only bought by the poor people at Xmas. Potato cake and boxty were made. The potato cake was made by mixing mashed potatoes and flour together, then rolling it flat and cutting it into parleys which were baked on a griddle.
Boxty was made by rasping raw potatoes, mixing them with flour and boiled potatoes and baking in an oven.- Faisnéiseoir
