    by hand and it is given a rolling motion from side to side. People know when the butter is made when the butter is seen on top of the buttermilk in small particles. Water is always poured in during churning. Sometimes hot water is poured, sometimes cold water and sometimes luke-warm water according as it is needed. People say that water helps to bring on the butter more quickly.
    The butter is gathered together in the churn by twisting the handle around slowly. When it is gathered, it is taken out with two timber 'shovels' as they are called. It is salted then, and is put on a large plate or butter cooler. Sometimes people put branches in the butter, with a little round bit of timber which they have for the purpose.
    Long ago people used always put a small coal of fire under the churn when churning, it being a local custom. The buttermilk is used for making bread. Some of it is given to pigs and people drink a lot of it.
