    Churning.
    When the milk would be drawn form the cow, it is strained and set in pans, placed on a stelling. it rests there for many hours before the cream would be skimmed off, and put in a tub called a cream tub. You would do this until you would have enough to make a churn. Then the cream would be put in a churn barrel. Then the barrel would be revolved by hand or by means of machine.

    It should be carefully watched then, until the butter would be made. During churning the barrel should be frequently vented, by taking out the vent-peg. When the butter is breaking in the barrel the sound
