Ar an leathanach seo

  1. Before creamaries were established people made their own butter.
    A "dairy" was attached to each farmer's house. It was a large airy room, kept scrupulously clean. There were shelves made of planks of wood around by the walls, on which were placed the shallow pans or "Keelars" of new milk to set. These shelves ere called "stillíns" (stillions)
    After the lapse of some hours the cream was skimmed off, and put into a tub for the purpose.
    Butter was made twice a week.
    In some houses churning was done by the hand. The barrel was turned by two people - one at each end. (handles)
    In other houses the barrel was turned by an animal outside the house going round in a circle, and by some arrangement with a churning machine or churning gear, the barrel inside was turned round until cream formed into grains of butter. These grains were taken out, washed first in clean cold
