- Churning IIThe churn we use is an End over End make, there is just the frame about two feet six inches high and is worked by turning a handle that is set in the churn. The churn itself is like a barrel about three feet two inches high and fifty four inches round the centre and forty inches top and bottom. The lid is kept in place with four screws and has a ventilator to let out the air, and glass to see how the cream is doing. Butter is made three times a week during the year. It takes twenty minutes to churn the butter. It is the custom for any one who comes in while churning is going on to say, "God Bless the work", and take a turn at the churn. If they do not do this it is supposed that the butter will not come on the milk. Water is added to make the butter come quickly. The buttermilk is used for making bread.
