"boxty" were also made long ago. The whole-meal, some flour, soda and salt were mixed with buttermilk until it was made into a stiff dough. It was baked in an oven with coals on the bottom and on the lid.
The way boxty was made was, first potatoes were washed and peeled, then they were grated on a coarse tin grater. After that the grated potatoes were put in a fine cloth and the water was squeezed out of them, then they were mixed with some flour, and a teaspoonful of salt. It was baked in an over or a pan.- Bailitheoir
