At this stage, too, the cup which had been on the top of the lid, is let down to the end of the dash to help in gathering the butter.
When the grains of butter are thoroughly gathered the lid is removed and the butter taken out with butter spades which have already been washed ans scalded. It is washed until the butter milk is all removed and the water comes clear. It is salted and finally made into rolls for home use and for market.
In olden times there were many superstitions about churning and some people believed in various superstitious practices relating to it. The first and most evil of these was the skimming of wells on a May morning before sunrise and the mumming of evil incantations while doing so, by those people who mean gain to themselves and harm to their neighbours.
