    all the weeds are taken out of them. In October they are dug and put into pits for the winter. These pits are about eight yards long and one yard in width, and there are about eighteen inches of clay put on the potatoes to protect them from frost and snow. Potatoes are very useful as we get starch from them. When making starch first the potatoes are grated into a basin, and then those grated potatoes are put into a cloth and the starch and water are wrung out of them. Then the starch settles on the bottom of the vessel and the water is drained off it. Then it is kept renewed with clean water until it is purified and made white. Then this starch is used for starching all kinds of clothes.
