Bread was also made from potatoes.The potatoes were boiled and mashed.Then some wheaten flour wet with milk was used with the mashed potatoes and kneaded into a cake .This cake was baked on a griddle.When a nice brown crust was on it ,and the inside well baked ,it was taken up and allowed to cool somewhat.Then it was cut into small portions and battered nicely on the top.It was then eaten hot and buttermilk or skim milk was taken with it .In some houses through the country potato cakes are still made and young people are very fond of them.
When people make bread on an oven a cross is cut in the cake to allow steam to escape.This is not done in the case where bread is baked on the griddle.- Bailitheoir
