    Boxty.
    Boxty is a very delicious food when properly made. It can be fried, boiled or baked. The nicest way to make it is to boil it and allow it to cool and then fry it in bacon fat. The bacon gives it a very nippy flavour and it is delightful to eat and easy to digest. I have seen my grandmother make it and her recipe for boiled boxty was equal quantities of mashed boiled potatoes, grated raw potatoes (wrung dry) and flour, salt and flavouring of caraway. Too much of any of the ingredients spoils the mixture.
    Have the boiled potatoes well mashed. I saw them mashed with the bottom of a good strong delph mug. Grate the raw potatoes well washed and peeled or scraped and all sand removed. When grated get a very clean cloth and wring that is put in the grated potatoes to the cloth
