- (ar lean ón leathanach roimhe)Boxty bread was made from potatoes - some boiled and some raw. The raw potatoes were washed and peeled and were then grated into a basin. Then they were squeezed through a clean cloth. They were then mixed with the boiled ones and spread out very thin and cut into squares and baked on a griddle.
People made it a custom to eat eggs on Easter Sunday and on St. John's day they killed some fowl and sprinkled the door posts with its blood. On St. Patrick's day the country people always ate eggs and fish for their breakfast and cabbage dressed with margarine or butter but no meat.
