- (continued from previous page)Bread: They made potato bread and oat-meal bread. Fadge is the name given to potato bread in this district. Oat bread. Very seldom oatbread is made now. I suppose the reason is the meal is too dear and the people now buy it by the stone.
How made:- The meal was put in a dish and boiling water was poured on it until it was fairly wet. It was then mixed and it was put out on the table on which meal was shaked. It was then baked out with the hands until it was about half-an-inch thick. It was then placed before the fire on a bread iron - a think for the purpose. It was left before the fire until it was hard on the side facing the fire and then the other side was turned. I saw the cake of oat bread leaned on three sods of turf before the fire in a house.
