    In our house they churn (three) three times each week during the summer and twice each week during winter. My mother always makes the churning. If a stranger comes into the house during churning it is not the custom for them to take a turn at the churn. It takes just an hour to churn. In our churn they work the staff up and down. They know know when the churning is done when the butter breaks into nice little rolls on the top of the churn lid. When the churning is done you (do) wash down the churn with pure cold water.
    They gather round the butter into one lump and draw out the churn staff. Then scald and wash their hands, the lift out the butter with a ladle into a well scalded wooden dish.
