- Long ago the people churned their milk at home. There were no creameries in olden times. At that time the people had dairys of their own in which they churned.
They churned every few days, especially in the summer time when milk was plentiful. The butter was then packed in little wooden barrels called "firkins" and brought to the market in Sligo in carts on a Saturday.
The churn and churn dash was made of wood, by a carpenter in the district. This man was often called a "cooper." A churn was about two feet high.
About every few weeks the people churned in winter time as the milk was scarce then.(continues on next page)- Collector
