    Boxty:-
    Two rounds of boxty baked on the pan,
    Each one came in got a farl in her han',
    Butter on the one side, gravy on the other
    Sure them that gave me boxty were better than my mother.
    Recipe:-
    1 lb. raw potatoes
    1 lb. cooked potatoes
    1 lb. flour
    2 teasps. salt
    Buttermilk
    1 teasp. bicarbonate of soda.
    Method:-
    Wash & peel raw potatoes. Grate on to a linen cloth. Wring tightly catching liquid in a basin. Put pulp into basin & cover. Mash cooked potatoes. Leave liquid in basin until starch sinks to bottom & water is clear.
    Pour off water & put starch on top of potatoes. Mix well. Seive over this flour etc. & mix well again. Add enough buttermilk to make batter. Leave for a few minutes & then fry.
