Starch
was often made locally from potatoes. The largest of the potatoes were washed and peeled They were then grated with a grater which was a piece of tin roughened by making many holes in it with a nail. The piece of tin was nailed to a piece of timber larger than itself. The potatoes were then rubbed along it to grate them. The water was then strained from the pulp and the water was left rest in a vessel for some time. When it was then stirred a thick layer of starch lay in the bottom of the vessel.
The old women used always starch their linen caps.
