- Churning is very hard work, that is churning as it used to be done until of late years. At the present throughout Ireland the milk is almost entirely churned in the creameries, but even still some few country people stick to the old methods of making butter.
Until a few years ago when creameries became common farmers made their own butter by putting the cream in a vessel called a churn, and stirring it or churning it with a churn-dash until butter came in the cream.
Sometimes the people found it difficult to turn the cream into butter, and they attributed this difficulty to various causes. In some parts of the country if butter failed to come on the churning the owner believed it was because he had some neighbour who wished him evil.
