- The people in olden times around here used mostly oatmeal bread. They mixed the oatmeal with water, and baked it on a board. Then it was left for a little while until it got firm then it was put on a gridiron before the fire and baked until it was quite hard. These were called bannocks and they were baked every day. Sometimes they baked potato cakes. These were baked by boiling the potatoes and breaking them up fine, then mixing them with flour and a little cream. Then they were cut out into squares or little cakes, and put on a frying pan to bake. A griddle was also used for baking(leanann ar an chéad leathanach eile)
