In the winter time of the year when milk was scarce, they would steep oatmeal in a crock of water, let it sour and use it for making bread. This "barm" was called bull's milk. They also made "Flummery" out of oatmeal. Most of the bread used in the home was oaten bread, which was baked in front of a fire, not over a fire as nowadays. At other times they made "brose", this was made by putting oatmeal in a bowl and pouring boiling water over it, and leaving it to set.
