    the malting or scalding of the malt. He gets two forty gallon barrels with an inch auger hole near the bottom of each. Inside this hole is placed a piece of perforated zinc so that nothing, except liquid can pass through the hole. a bag of malt weighing twelve stones is divided equally into the two barrels thus prepared and the water, which is now nearly heated, is tested with a thermometer until it is at 170 Fahrenheit in scalding heat, it is then poured on to the malt in the barrels and the pot is refilled. The contents of the barrels are then mashed, that is [?] very hard, with an oar-shaped stick, broad and flat at one end. With the stick it is beaten around the barrel, very hard, until foam is raised, nearly to the top of the barrel. This is very hard work and it must be done to get all the juice out of the malt. When the distiller is satisfied that he has sufficiently performed this task he pulls out the plug which is corking the hole in the bottom of the barrel and he drains off the liquid into two empty barrels, which has close at hand for the purpose.
    When the second pot of water is at scalding heat he does the same with it giving the malt in the barrels a second washing so as to take any juice, that may remain, out of it. This he draws off again in the same manner leaving, what is called,
