In early Spring the pit is turned and all sprouts are broken off, this turning is done at intervals of about three weeks and all sprouts broken off and all bad potatoes thrown away.
Potatoes which are to be sown early are placed in boxes and are uncovered. These grown nice thick green sprouts which are not broken at the time of sowing.
People judge the time for digging by the following plan. They pull a stalk from the ridge or drill and if the potatoes come up with it they are not yet ripe for digging, but if the potatoes stay in the ground they are ripe for digging.
Potatoes are not fit to be eaten until the stalks are in bloom.
