  1. In olden times the bread was made out of oat meal. There was some flour made out of wheat but not much. My father never heard tell of querns being used in my district.
    The people ate Oat Bread, Boxty Bread and Potato Bread in olden times.
    My father never saw any marks on top of the oat bread, because it would all break and then it could not be harned. It was harned on a griddle and on a stake pan. Bread was always baked in front of the fire standing against a griddle. The griddle was made out of cast metal. Griddle bread was always made, and they were very glad to get it.
    The people ate Boxty Bread at Christmas and browses at Halloweve, and at Easter
