Then it is skimmed into the crock and the same thing is done for four or five days. Then it is churned. If anyone comes in when it is being churned he takes the churn and gives it a praish saying "Good Luck". When the milk is churned we take the churn and shake it about to gather the butter. Then it is taken off the churn it is put into a basin, salted and haired with a knife. Then it is made into 1lbs and 1/2lbs or 2lbs.
