    are putin pits they are covered well to keep out the frost and rain. The names of the potatoes are Irih Queens Epicures, Champions Arran Banners. Potatoes were used instead of buying starch. The potatoes were grated and then strained and left to shine and the water was poured off and then the starch was ready for use.
