    the stalks have all withered away and the potatoes ripe for digging, they are dug, and made into heaps on the surface of the ground they are dug from. The heaps are thatched with rushes or straw. They are then covered with clay. In the month of October the potatoes are dug.
    The name given to the potatoes are 90 Folds, Aran Victory, Kerrs Pinks and Aran Banners. The potatoes that grow best in this district are the 90 Folds and the Kerrs Pinks.
    In former times people used to make starch for laundr work from potatoes. First of all they peeled the skin off the potatoes. Then they were grated. The juice that was in the potatoes was drained off, and then boiling water was poured on. It was then put on the fire, and let boil for about five minutes. The starch was then made. It was better starch than what we get now.
