    ready for use or to be sold. The milk that is left in the churn is called buttermilk. This milk is used for baking and many other purposes.
    Long ago there were no creameries in Ireland, and the milk was all churned at home. In summer churning was done every day. This was heavy work for the women of the house. They got up at five o'clock in the summer mornings and had the churn done and the butter made before breakfast.
    Nowadays there are creameries and most of the people in this district send their milk to the nearest creamery. There are carters who draw the milk and a charge of 1/2d per gallon is made for the cartage. This is taken off the milk money at the end of each month.
