The butter now resembles a hardened form or putty and is almost snow-white in colour.Mr. Patrick Catherson who discovered it, says that he came on it immediately after ‘paring’ operations in cutting the turf.The discovery, apart from its antique value, shows that the Irish understood the modern principles in refrigeration, and the values of bog as a preservative.I would like to say, en passent, that my visit to this house in the centre of a vast bog (Catherson’s, Pollyarmon) impressed me very much. A small thatched cottage, with a very cheerful old woman (Mrs Catherson) and family, were isolated from the world, surrounded by a few stunted shrubs and elder trees, just on the “border” that divides “Northern Ireland” from what was formerly called “The Free State”.
