Ar an leathanach seo
- (ar lean ón leathanach roimhe)and light grains blow away. It was ground with a quern.
A quern consisted of two round stones with a hollow in the bottom one. The top one had a stone handle. It was turned round and the ground wheaten flour came out at a little hole in the side between the two stones.
A quern was in use in my home - Ita Harlin Assry Navan - and is still preserved, though now it is never used.
The water used was mixed with a little honey. Yeast was used to make it rise.
It was baked on a griddle placed before the fire. The griddle was placed slanted towards the fire.
Sometimes the griddle was placed on a triangular stand and some "gresha" or hot turf ashes were placed under it. It was drawn out a little distance from the fire. The cake was marked with a cross in Honour of the Crucifixion.(leanann ar an chéad leathanach eile)- Bailitheoir
