Boxty is a dish peculiar to the district. It can be baked boiled or fried and is made from raw grated potatoes, boiled mashed ones and flour. A variation is "the Roger" which is simply Boxty with currants and raisins and which is eaten on Hallow Eve.
I may add that in living memory the people subsisted on potatoes and salt for dinner and supper.
I may also record that local history goes back only about fifty years as most of the people must have been wiped out by the Famine
