  1. My father grows a large crop of potatoes each year. We have about two acres under potatoes. Potato bread and boxty is made from potatoes. They way "boxty" is made the potatoes are first washed clean and then grated. Then they are squeezed to put the water out of them. A few boilt potatoes are mixed with that and a quantity of flour added. Then all are mixed together and into an oven and baked like an ordinary cake.
    Potato bread is made with potatoes boilt and oat meal. Then they are peeled and brused and put into an oven and is baked like any other cake.
    Dumplings are also made from potatoes and flour. The potatoes are put into a cloth and boiled
