  1. I have a churn at home. It is a little four for, gallon hand-churn. The churn is about four years old. There is a short handle attached to the dash there is a flat piece of iron screwed on the churn. On the opposite side of the churn near the bottom there is a hole to empty the butter-milk this is plugged with a stick. The people churn three times a week in Summer and once a week in Winter. Everybody in the house takes a hand at the churning. If a stranger comes into the house while the churning is going on he has to take a turn at it or he won't be let out of the house for fear he would take the butter with him. It takes about twenty minutes to do the churning. I never saw churning done by the foot in this district. The dash is moved from side to side to gather the butter. The people say the churning is done when the dash is clean. Cold water is added to the butter-milk before the butter is taken off so as to sleave, harden
