    When the churning is done by hand the dash is always moving upwards and downwards.
    The people know when the butter is done because it comes up in lumps on the dash.
    The water is poured in at the beginning of the process for to raise the temperature of the milk.
    When the butter is done some people put a bit of a stick under the churn and rock it from side to side and then the butter is taken out with a wooden plate called a trencher and the butter-spades, then is it rinsed and salted. When any strangers come in they say "God bless the work", or "I'll leave the weight of myself of butter on this". The custom of giving a help or taking a brash at the churning as it is called is very old because long ago when a person entered the house while churning was going on and did not help they were supposed to be taking part of the butter away with them.
