- Long ago, when flour was scarce in Ireland the people of this part of the country used to make oat meal bread, and boxty.
The ingredients they had for oat meal bread was some oat meal mixed with water, and a pinch of salt, and they used to make parleys of it, and bake it on a griddle.
This bread was called arán cource by the old people.
When the people used to go making boxty, first they used to scrape some clean potatoes with a scraper, and then they used to squeeze it in a clean cloth until it would be very dry.
