- BreadBread was usually made from corn in former times, because wheat was very scarce during that period. At that time there was no wheat growing in Ireland. The flour came from foreign countries especially from America.Small water mills were very common long ago and is most houses there was a quern or hand mill, which was usually worked by women.There were many different kinds of bread made namely boxty, pancakes, griddle cakes and oatmeal cakes. The former was made in the following manner. First of all the raw potatoes were peeled and grated. Then they were put into a very clean bag and the water was wrung out of them, and they were crumbled out into a basin.The other indgredients were salt, soda, milk and flour. These were all mixed together.Next a hot oven was oiled and the dough put into it. It took more than half an hour to bake it.The griddle cakes were made into a square shape. The bread was baked in front of a fire standing against a support which was made from iron. A long time ago a woman went into a house, and there was a griddle cake being baked in front of the fire.She had a small child in her arms, and she asked for a piece of bread for him. the house maid(leanann ar an chéad leathanach eile)
