- (ar lean ón leathanach roimhe)and after about seven weeks they are second earthed. This is done by ploughing the furrows at each side. After a fortnight they are sprayed to protect them from the blight. The potatoes are dug out or ploughed out or lifted with a potato-digger. The farmers often "cor" with one another and there are usually a lot of men and women picking the potatoes. The potatoes are put into pits in the garden and left there for a fortnight. Then they make a big pit in the haggard and the potatoes are put into it. They are covered with straw and earth to prevent them from the frost. The poor man digs his potatoes with a spade. Long ago starch was made from potatoes by grating the raw potatoes into a bowl and by filling the bowl with cold water. The water was put into the bowl until it ran clear. Then the hot water was put into the bowl and the starch was made.
