- In olden times many kinds of bread were made in Ireland.
The following is an account of how the old people used to make a potato cake.
First, they boiled the potatoes in a small pot of water on the fire.
When boiled they took them off the fire and peeled them and pounded them on the table with the bottom of a porringer, then they kneaded salt, pepper, and flour (made locally) into the potatoes with their hands and made it out into a round cake about an inch deep. Then they cut it into farls, and baked it over the fire, first one side, and then the other.
This bread had to be baked every day, and eaten while hot.
