- When buttermilk is scarce in this district a liquid called barm is used instead for making bread.
Yeast, sugar and flour were put with some tepid water into a vessel and is left overnight. In the mornight the barm is ready for use. A little water is added is added to it when making bread.
As the barm is being used up more water is added to what remains in the vessel.
Twopence worth of yeast makes three quarts of barm and this would least a long time. Barm makes the bread rise better than soda and is far sweeter.- Collector
