    altogether. Next it was salted and packed into sixty or eighty lbs firkins. The following week the butter was taken to the person who had most butter due and so on until they had the year's butter collected.
    At the end of the year all the firkins were taken by road to the Cork Butter market. The people of this district would leave home the previous evening and keep travelling until they reached the Ten Mile House. There they would feed their horses and take some refreshments for themselves. At the early hours of morning they would go on their journey and reach the city before the gates of the weigh-house were opened. The porters took the butter to be weighed and tested, and it was branded first, second and third quality by the tester. A different price was given to each mark.
