Sometimes a cake of bread is made from potatoes. This is called boxty bread. Long ago people would roast potatoes out in the field. It is seldom done now.
In winter time when buttermilk is scarce people make barm from potatoes a cupful of flour and water and a little salt. This is put in an air tight jar for nine days. When the cake is make leave it on the top of the range for about an hour. Then bake it. It makes a lovely cake. - There are many festivals during the year through out Ireland.
