    we cover the scalps with clay. In about a month little green stalks appear. Then we cover them with clay to preserve them from the frost; this is called second moulding. In about two months more we spray them to prevent the blight from attacking them. Soon after we plough them up and then a boy picks them. The boy ties a sack and round his shoulder and he puts the potatoes into it. When he has as much as he can carry puts them into a cart near by. When the cart is full we bring them home and put them in a pit. The pit is made in this way. A hollow is made in the ground and the potatoes put into it. Then they are well covered with dry straw and over this clay is put. This
