- (continued from previous page)and when they were at their dinner the potatoes were put in a "basket" which stood on legs in the middle of the floor and they took a potato when they wanted one. Any meat that was eaten was always fresh and there were no salted fish.
When ever there was fish they were always fresh because at that time did not know how to cure fish nor salt them. The bread they sued was called wheaten-bread and it was baked on a griddle. The following is a drawing of a griddle
and the griddle was hung over the fire by two crooks and the cake was put in the middle. The cakes were made of meal mixed with water and salt. "Potato bread" was made on the griddle also. When tea came to Ireland first(continues on next page)- Collector
